If you’re anything like me, you’re obsessed with the Food Network. And why not? They hold the key to the food world. They’ve saved my ass on so many occasions, and have given me the knowledge and expertise to throw barbecues all summer long that make my neighbors envious. That’s an important skill when it comes to being a member of the motorcycle community, which is why today, we’re giving you the in on how to make bacon-wrapped avocado eggs. They’d be a fine appetizer at any barbecue, or even a simple, yet delicious addition to your breakfast regimen. Thanks to the Food Network, even your most avocado-hating friends will be loving this delicious bacon wrapped treat.
Bacon-Wrapped Avocado Egg Bombs
– 14 slices of Bacon (uncooked)
– 2 Hass Avocados (ripened)
– 2 Eggs (boiled)
Set a pot of cold water with 2 eggs to boil; once boiling, simmer for 6 minutes. While eggs are cooking, de-pit and de-skin avocados – do not slice – only cut in half. Carve enough avocado from the center to fit boiled egg. After simmering eggs for 6 minutes, transfer to bowl of ice water and let sit for one minute. Remove the shells, and add egg to center of 1/2 avocado; top with the other avocado half. Lay out 7 slices of uncooked bacon per avocado – 4 vertically and 3 horizontally. Roll egg filled avocado in bacon. Fry in olive oil for 10 minutes.
Prep Time: 5 minutes
Cook Time: Approximately 16 minutes
To make a full egg carton, use 12 eggs, 12 avocados, and 84 slices of bacon.
